Hailing from the Pacific Northwest, this strain is a mild ester producer while promoting malt character. It can be used for a range of styles from an English mild to an American IPA or Irish stout. A great flocculator, it leaves a clear beer and saves on conditioning time.

Species: Saccharomyces cerevisiae

Profile: An excellent yeast strain for use in Belgian dark strong ales. This strain has a relatively “clean profile” which allows a rich malt and distinctive ethanol character to shine. Delicate dried fruit esters can be produced when used at higher fermentation temperatures or in a high gravity wort.

Pre-ordered yeasts are ordered directly from the manufacturer on your behalf and we do not use in-stock yeast to fulfil pre-orders.

PREORDER DEADLINE: Every 2 months we place a liquid yeast order with Wyeast. All pre-orders placed will be part of our next order from the supplier, subject to the supplier having your pre-ordered strain in stock.

We place our orders on or after the 20th of the month. The deadline to ensure your pre-order is included is midnight the day before.

All pre-orders will be available for pickup or shipping after we receive the yeast which is usually around the first week of the month.

Belgian Saison II Ale Yeast strain is a moderate phenol producer with clove-like flavor and aromatic notes present in the finished beer. Some fruit-forward ester production provides a balance between fruit and spice aroma and flavors. This strain ferments and flocculates well, making it an easy-to-use option for saison and farmhouse ales.

This recipe was not specifically designed to be consistent with the BJCP style guides, but we believe it is similar to X5 - NZ Pilsner.

We just can't get enough of NZ Pilsners! This one, unlike others we've made before, uses the holy trinity of Kiwi hops: Riwaka, Nelson Sauvin & Motueka - and the bitterness is kept to a civil level. Have a sip and you feel home. Nice.

This recipe was not specifically designed to be consistent with the BJCP style guides, but we believe it is similar to 04A - Munich Helles.

A not quite traditional German Helles lager brewed using Best Malz. This malt is newly available in New Zealand after centuries of production in Germany. Light and highly sessionable, perfect for a hot day.

We used some Hallertau Blanc to give it a subtle fruity twist - don't tell the Germans!

This Belgian strain, traditionally used for wild yeast fermentations, produces a slightly tart beer with delicate mango and pineapple characteristics. This wild yeast has grown in popularity for styles like American IPA, American pale and blonde ales due to its tropical and stone fruit flavors and aromas. This Saccharomyces strain can be used like other house strains and can be easily cleaned with proper CIP procedures.

This strain ferments much cleaner than its hefeweizen strain counterparts. It produces very slight banana and clove notes and has low flocculation, leaving resulting beers with characteristic cloudiness.
