Toffee Malt is a fully caramalised malt that is toffee like to chew instead of the crystalised popcorn affect of using higher temperatures. The resulting malt is very popular for adding a malty toffee flavour to lighter colured beers and also adds good beer stability, body and mouth feel.

This product is used in the production of dry or bitter Stouts and other dark beers, or for the careful adjustment of Pilsen beer colours.
Roasted Barley, as the name suggests, is made from unmalted barley. It has a slightly darker colour than our Gladfield Chocolate Malt range and is ideally suited for use in a Dry Stout. Roasted Barley adds a lovely rich roast flavour and dark espresso like flavours to brewed beer. Like all roasted malts, it should be used fresh to get the best out of it.
A different, slower roasting temperature profile is used but the final temperature is 220°C or even higher, which is achieved by allowing the exothermic roasting reactions to continue after turning off the heat source. The reaction is stopped by quenching with water. Because of the high temperature at the end, colour pick-up at this stage is very rapid and extreme care is needed to prevent carbonisation.
Because the roasting process is slightly different from that used for Roast malt and a higher final temperature is used, the balance of pyrazines to pyrroles is different, with there being more pyrazines present in this product. This leads to a more bitter flavour and the use of the material in the so-called bitter Stouts. With extreme care it can also be used to colour and flavour Lager beers, but the quantities used are very small, certainly no more than 0.2 or 0.3% of total grist.

Flaked Barley is barley grains that have been steamed and rolled to gelatinize their starches, making them accessible for conversion to sugars. Because the grain is un-malted, it does not possess the enzymes required for this conversion by itself and it must be mashed with malted grains.
Flaked barley adds a rich, smooth, grainy flavor to your beer. It is high in protein and beta glucans. As a result, it will improve the body, head formation and retention of your beer. However, it can also increase the haze potential.
Flaked Barley can be up to 20 percent of your grist.

Crystal is prepared separately from pale malts. They are high-nitrogen malts which are wetted and roasted in a rotating drum before kilning. They produce strongly sweet toffee-like flavours and are sufficiently converted that they can be steeped without mashing to extract their flavour. Some of the sugars in crystal malts caramelise during kilning and become unfermentable; hence, addition of crystal malt will increase the final sweetness of a beer. They contain no enzymes.
