Flaked Torrefied Maize consists of maize grits that have been torrefied at high temperatures. This results in the starchy endosperm becoming gelatinised. The product is then flaked to promote utilisation in the mash. Flaked Torrefied Maize is often used to lighten wort and can add an unique corn sweetness to beers.

This is a bulk product - one unit equals 1kg.

Big O - Malted Oats are a great addition to use instead of a rolled or flaked product. Whole oats are fully modified and kilned to give a rich oat, nutty flavour.

Big O - Malted Oats have a few great attributes that make a preferred product for Stouts and Hazy IPAs:

    • Large, thick husk which greatly aids in sparging and run-off
    • Much more flavour – kilned to enhance the nutty, oaty flavours and bring more to the table than a flaked product.
    • They bring the same silky smoothness to a beer that a rolled oat will.
    • Provides a better haze than rolled oats alone in your hazy IPAs.

    Some brewing notes:

    • The oats and husk will absorb more water so be prepared to increase the amount of your strike water.
    • Mix the oats with the barley during milling to help deliver an even crush.

Flaked wheat is not malted, therefore requires extra effort to extract it's potential sugar content, which will be lower than malted wheat. Flaked wheat is traditional in Belgian witbier and lambics, it contains more starch and higher levels of protein than malted wheat. It adds more mouthfeel than malted wheat and has a different taste, which is noticeable when used in larger quantities. If the grain bill consists of more than 25% flaked wheat you should consider a cereal mash, or precooking the wheat in order to gelatinize it so you can extract more sugars out of it.

Gladfield Maize Malt - can be used in lagers and bourbon whiskey.

Maize malt adds mild, less malty flavour to beers and less body. It also provides a drier and crisper beer. We recommend adding Rice or Oat Hulls to recipes using more than 10% of Maize Malt to avoid a stuck mash.

    Gladfield Oat Hulls

This is a bulk product - one unit equals 1kg.

Oat Hulls are the outer shell layer of the oat, inedible and normally removed from the oat, when used for brewing the hulls improve the filter bed of the mash to decrease the likelihood of a stuck mash. Oat hulls are non-fermentable, and provide bulk helping prevent the mash from settling and becoming stuck during the sparge. Hulls are generally used when making wheat or rye beers.
Usage rates are recommended up to approximately 5% of your grain bill for any recipe that you think is likely to result in a stuck sparge.
This product is the New Zealand version of Rice Hulls.

Just as malted wheat is crucial to Germany’s wheat beers, unmalted, raw wheat is essential to several Belgian styles. Raw wheat produces beers less sweet and full bodied than those made with malted wheat, making it an excellent choice for the more crisp and refreshing styles.

Witbier, the Belgian version of “white” beer, is likewise made from unmalted wheat (50 percent) and malted barley (along with an occasional addition of oats). Witbiers can be brewed from step infusion or decoction mashes, but long protein rests (45 to 60 minutes) are necessary to allow any lautering at all.

Can be used for baking bread if you have a flour mill!
  10. Gladfield Roasted Wheat malt Gladfield Roasted Wheat malt
    $5.10/kg

    Gladfield Roasted Wheat malt

(bulk product - please select amount on product page)
This is a bulk product - one unit equals 1kg.

Gladfield Roasted Wheat is produced by roasting unmalted wheat. It is a great way to get those roasted coffee and chocolate flavours without the extra bitterness that comes from roasted barley or chocolate malt. The wheat malt, lacking its outer husk, is less susceptible to burning at the higher roasting temperatures which prevents bitter and astringent flavors. This malt is a great addition to any darker beer style.
