    Cryo Hops® utilizes the most innovative technology in cryogenic processing where whole-leaf hops are separated into concentrated lupulin and bract at extremely low temperatures to preserve the essential oils and resins.     The Amarillo variety was discovered by Virgil Gamache Farms Inc. in one of their hop yards in Washington State and propagated and introduced by them as Amarillo. Unlike most varieties of hops, which may be acquired and propagated by the purchase of rhizomes, Amarillo hops are privately grown only by Virgil Gamache Farms; also the organization holds a trademark on the name "Amarillo" for hops.

    Ariana is a new hop variety from Germany, and it's definitely not typically German! It shows aromas and flavours of black berries, blackcurrant, peach, pear, tropical fruits and resinous. Sounds to us like a great hop to try in your next hop forward beer. Try pairing it with some big new world hops (Citra/Mosaic etc) to increase flavour depth.

    AA is usually around 9-13%.

    Peated malt is used by some malt distillers to impart a smoked or peaty flavour to their spirit. This type of malt may also occasionally be used as a very small inclusion in brewers’ mashes to produce beer with a smoked character.
    Peated malt is made using exactly the same production regime and barley as (plain) distilling malt during kilning. The peat smoke is absorbed onto the surface of the drying malt which, when processed, imparts the smoked peaty flavour to the finished product.

    Pale Ale malt forms the majority of the grist for a typical U.K. Pale Ale or Bitter beer and is made from some of the best barley available. There is an emphasis on single variety and low protein levels. The barley will be fully steeped and germinated before the green malt is loaded to the kiln. Kilning is a carefully controlled process removing moisture to a relatively low level without destroying excessive amounts of enzymes but imparting characteristic flavour and colour. Even with a diastase of only 45°L there is still enough activity to convert for example 5% of Crystal malt and 5 -10% of cooked adjunct (e.g. flaked maize). Mashing is normally at a fixed temperature of about 65°C, so modification has to be high to cope with this and a coarse grist is normally used.
    Many UK brewers stress the flavour benefits in the wort and glass of using Pale Ale malts produced from traditional winter malting barley varieties.

    A premium Pilsner malt, BEST Heidelberg is made using special, two-row barley variety that tends to create less color during the malting process. BEST Heidelberg is suited to particularly pale beers and is similar to the Weyermann Premium Pilsner malt. The malt has a slightly lower protein content than a classic Pilsen Malt from the corresponding crop year, but with a high extract value and very high enzyme activity.

    Base malt for Pale Ales, Pale Premium Pilsner and Pilsner beers, ‘light’ beers, as enzyme-rich and light-colored basis for all beer styles.

    BEST Munich intensifies the mouth feel and malty flavor of amber to dark beers in a pleasant way. Even a small amount in the grain bill gives the beer a typical malty note. BEST Munich is therefore ideally suited to enhancing the body of very highly fermented beers. Due to the generally higher levels of protein in this malt, the higher its concentration in the grain bill, the better the foam of the beers brewed with it.

The malt was designed for a 12°P beer. To retain the red color in stronger beers, some BEST Pilsen Malt should be added to the grain bill due to the higher wort gravity.
