    A premium Pilsner malt, BEST Heidelberg is made using special, two-row barley variety that tends to create less color during the malting process. BEST Heidelberg is suited to particularly pale beers and is similar to the Weyermann Premium Pilsner malt. The malt has a slightly lower protein content than a classic Pilsen Malt from the corresponding crop year, but with a high extract value and very high enzyme activity.

    Base malt for Pale Ales, Pale Premium Pilsner and Pilsner beers, ‘light’ beers, as enzyme-rich and light-colored basis for all beer styles.

    Recommended Quantities: Up to 100% of total grain bill

    Bestmalz Pilsen malt is used either alone or together with other malts, it is the perfect base malt for all kinds of exceptional and flavor-some beers.
    Base malt for all beers, Premium Pilsner and Pilsner beers, Export, Kölsch, Lager, Helles, light beers, and as a base malt for almost all beer styles.

    BEST Munich intensifies the mouth feel and malty flavor of amber to dark beers in a pleasant way. Even a small amount in the grain bill gives the beer a typical malty note. BEST Munich is therefore ideally suited to enhancing the body of very highly fermented beers. Due to the generally higher levels of protein in this malt, the higher its concentration in the grain bill, the better the foam of the beers brewed with it.

    Base malt for all dark beers, Export, Märzen, Alt, wheat beers, Bocks and Brown Ale.

    Gladfield Sour Grapes malt is designed for pH adjustment in the brew house mash. Sour Grapes is produced through a combination of lactic growth during germination from naturally present bacteria on the grain and a lactic bath prior to kilning grown from the same lactobacillus strains.     Gladfield take their top quality Pilsner malt and smoke it over 100% Manuka wood from the West Coast. This malt has a smooth smoke character that is both floral and sweet. Perfect for a Kiwi twist to a Rauchbier or to add something unique to almost any beer style. Use this malt anywhere between 1 and 100% depending on the required smoke level.

    Red Back Malt is a unique malt made by Gladfield. It is prepared by a special process before going into the roaster, where it is roasted to favour certain maillard reactions which cause the malt to produce a lovely red hue in the resulting beer without the opalescence that can occur with other similar malts. In other words the wort colour is bright with good clarity but most of all a lovely red colour. It goes well with Gladfield Pale Ale and Aurora malt which is melanoidin malt.

    Shepherds Delight is a stepped up version of Gladfield Aurora malt. It has intense bready, toasted and kola flavour with a lingering fruity sweetness. This malt should be used sparingly to supercharge the maltiness of a beer and will give flavours similar to a decoction mash. Used at too high a concentration could lead to bitterness in the final beer. We recommend combining Shepherds Delight with Gladfield Vienna malt to give a balancing sweetness. This malt will give a stunning red hue to your beers.

     Gladfield Malt's recommended malt substitutions:

    For 1kg of Weyermann Caraaroma malt, replace with 1kg Gladfield Shepherd's Delight malt instead.
    For 1kg of Weyermann Special W malt, replace with 1.62kg of Shepherd Delight malt and 0.18kg of Dark Crystal malt instead.
    For 1kg of Dingemann Special B malt, replace with 1.62kg of Shepherd Delight malt and 0.18kg of Dark Crystal malt instead.

    Aurora has been developed to produce rich bready, fruit cake aroma and orange/red colour. It has a long traditional germination process to create complex sugars and amino acids which react during a careful kilning regime. The resulting maillard reaction is responsible for the colour and flavour.
