    The League Brewery is the smallest craft brewery in the top of the South.     This recipe was not specifically designed to be consistent with the BJCP style guides, but we believe it is similar to 05B - Kölsch.

    Kölsch (or Kolsh or Kolsch for people afraid of dots above the o) is a traditional German blonde Ale from Cologne. It's so easy to drink that waiters in Cologne put a line on the edge of your coaster to keep up the count when serving you fresh one, and it's not unheard of to make those lines go full circle. To be fair, Kölsch is traditionally served in 0.2l glasses to drink it always fresh.

    The malt bill is as simple as they come: Weyermann Cologne malt (and some acid malt for pH).

    This kit comes with 2 packs of the new Kolsh dry yeast by Lallemand.

    Our kits are fresh! We assemble the ingredients after you place your order. The grain bill will be milled, unless you tell us in your order comments that you prefer it not to be.

    This recipe has been designed to use acid malt to reach the target mash pH. If you wish to use the recommended mineral additions to achieve the intended flavour profile, these are to be added to the boil only. This kit does not include the minerals, but these can be purchased separately.

    Mangrove Jack's Lactose 500g. A non-fermentable sugar made from milk, used to increase sweetness and mouthfeel. A common ingredient in Milk Stout, lactose can be used to increase the body and residual sweetness of any beer or cider.

    250g in a standard batch should have a noticeable impact however some brewers prefer to use more.

    FERMENTATION: ideally 12-15°C

    REHYDRATION INSTRUCTIONS:
    Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 21 to 25 °C. Leave to rest 15 to 30 minutes.
    Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
    Alternatively, pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 20°C. Progressively
    sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes,
    then mix the wort using aeration or by wort addition.

    SafAle™ WB-06 is a Saccharomyces cerevisiae var. diastaticus and is characterized by a particularly high attenuation.

    This typical yeast strain is recommended for wheat beer fermentations and produces subtle estery and phenol flavor notes (POF+) such as clove notes typical of wheat beers. Allows to brew beer with a high drinkability profile and presents a very good ability to suspend during fermentation.

    FERMENTATION: ideally 18-24°C

    REHYDRATION INSTRUCTIONS:
    Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 25 to 29°C. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

    Alternatively, pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 20°C.
