    NZ Willamette Hops is an aroma variety with a mid alpha acid content at 7.0%-9.0%.

    Although Willamette can contribute good bittering, NZ Willamette dominates its usage for its flavour and aroma. This results in a delicate peppery herbaceous spice that has both fruit and floral essence. This translates well into most beer styles and can be used in Stouts through to Pale ales and lagers. In big hoppy beers Willamette also pairs well with other citrusy hops.

This hop offers a unique aroma and flavour making it suitable for producing bigger more traditional style Lagers, especially Bohemian Pilsener. Excellent when employed in multiple additions from a single hop bill and sits well on the palate to balance speciality malt sweetness. An excellent variety for Belgian Ales and gives a real edge to Cask Bitter.

    Wakatu has an alpha to beta acids ratio of 1:1, along with low cohumulone, accompanied by nicely balanced oils which give this an understated floral aroma atop fresh lime. Alpha acids average 9%, so it makes for an outstanding dual-use hop. It can be added at any stage of the process from first wort to dry hopping. It has also been noted for its flavor stability.

    Fuggle was first noticed growing "wild" in the hop garden of George Stace Moore's house at Horsmonden in Kent, England in 1861. In 1875 it was introduced by Richard Fuggle who lived in the village of Brenchley (not far from Horsmonden) and hence it was called Fuggle. The aroma is earthier and less sweet than Kent Goldings.
