    Flaked Maize consists of maize grits that have been torrefied at high temperatures. This results in the starchy endosperm becoming gelatinised. The product is then flaked to promote utilisation in the mash. Flaked Torrefied Maize is often used to lighten wort and can add an unique corn sweetness to beers.

    Using Rolled Oats aka Flaked Oats in a beer recipe is typically due to a desire to increase mouthfeel. They are very effective at increasing the amount of beta-glucans which directly contribute to a creamy mouthfeel, popular in many styles including oatmeal stout and oatmeal porter.

    Flaked wheat is not malted, therefore requires extra effort to extract it's potential sugar content, which will be lower than malted wheat. Flaked wheat is traditional in Belgian witbier and lambics, it contains more starch and higher levels of protein than malted wheat. It adds more mouthfeel than malted wheat and has a different taste, which is noticeable when used in larger quantities. If the grain bill consists of more than 25% flaked wheat you should consider a cereal mash, or precooking the wheat in order to gelatinize it so you can extract more sugars out of it.

    Just as malted wheat is crucial to Germany’s wheat beers, unmalted, raw wheat is essential to several Belgian styles. Raw wheat produces beers less sweet and full bodied than those made with malted wheat, making it an excellent choice for the more crisp and refreshing styles.

    Richly roasted to bring a smooth espresso creaminess to your dark beers with a touch of rye spiciness. Beautiful in a porter or oatmeal stout where the coffee spice character is particularly well matched with the roast malts. Adds a further level of complexity to Vienna in a Dunkel or even something a little uncommon to a mild or English brown.
     
    Use 1-5% to enhance aroma and flavour characters without imparting bitterness or astringency. Please use the malt as fresh as possible and see our suggested recipe for a for a simple but surprisingly complex NZ Dunkel.

    Wetting the rye and carefully kilning produces a remarkably delicious and complex crystal malt with a slightly spicy caramel finish caramel and a nutty aroma. Superb in a range of beers including Pales and IPA’s, brings a new level of complexity to Golden Rye’s and is fantastic in a rye lager where a little spiciness changes things up rather nicely.
     
    Use up to 25% but as with all Ryes consider adding a few rice hulls as the ratio increases to assist lautering efficiency. Please use the malt as fresh as possible and see our suggested recipe for a for a delicious Golden Rye.

    Gladfield Maize Malt - can be used in lagers and bourbon whiskey.

    Maize malt adds mild, less malty flavour to beers and less body. It also provides a drier and crisper beer. We recommend adding Rice or Oat Hulls to recipes using more than 10% of Maize Malt to avoid a stuck mash.
