This recipe is designed to be in keeping with the 2021 BJCP Style guide 21A: American IPA.
Chameleon is a recipe created for The League of Brewers by Jamie McQuillan of Cell Division Brewery. It is built upon the foundations of a classic American (West Coast) IPA, “ a decidedly hoppy and bitter, moderately strong, pale American ale”, but with a couple of twists to showcase both a new hybrid yeast and a new hop variety.
The recipe is built upon a bill of American Ale malt with just a touch of specialty malt to gently support and allow the hops to shine. The beer is fermented with Lallemand’s newly released hybrid yeast, Pomona™ . Among other attributes, Pomona™ possesses an enhanced capacity for the biotransformation of hop terpenes to produce a unique and juicy flavour profile with notes of peach, citrus, and tropical fruits. The arrival of Pomona™ was perfectly timed allowing us to also showcase the newly arrived KrushTM (HBC 586 ) hops from Yakima Chief hops. This new US hop delivers a unique array of citrus, tropical, stone fruit and berry notes which pair beautifully with the much loved Mosaic hops.
Expect a classic West Coast style IPA, clean crisp and firmly bitter with a punchbowl full of delicious new world hop flavours and aromas.
This recipe assumes correct mineral additions for pH calculations, which are not included in the kit. Please purchase these separately.
Our kits are fresh! We assemble the ingredients after you place your order. The grain bill will be milled, unless you tell us in your order comments that you prefer it not to be.
