    Thomas Fawcetts Maris Otter Pale Ale malt is a very popular choice for brewing English-style ales.

    Appearance: Clean whole grains of malted barley.
    Application: Main ingredient for all types of ales, bitters, milds and stouts.
    Characteristics: Well modified producing consistent extract within the standard ale colour range, producing sweet and flavourful worts.

    Pale Ale malt forms the majority of the grist for a typical U.K. Pale Ale or Bitter beer and is made from some of the best barley available. There is an emphasis on single variety and low protein levels. The barley will be fully steeped and germinated before the green malt is loaded to the kiln. Kilning is a carefully controlled process removing moisture to a relatively low level without destroying excessive amounts of enzymes but imparting characteristic flavour and colour. Even with a diastase of only 45°L there is still enough activity to convert for example 5% of Crystal malt and 5 -10% of cooked adjunct (e.g. flaked maize). Mashing is normally at a fixed temperature of about 65°C, so modification has to be high to cope with this and a coarse grist is normally used.
    Many UK brewers stress the flavour benefits in the wort and glass of using Pale Ale malts produced from traditional winter malting barley varieties.

    A premium Pilsner malt, BEST Heidelberg is made using special, two-row barley variety that tends to create less color during the malting process. BEST Heidelberg is suited to particularly pale beers and is similar to the Weyermann Premium Pilsner malt. The malt has a slightly lower protein content than a classic Pilsen Malt from the corresponding crop year, but with a high extract value and very high enzyme activity.

    Base malt for Pale Ales, Pale Premium Pilsner and Pilsner beers, ‘light’ beers, as enzyme-rich and light-colored basis for all beer styles.

    BEST Munich intensifies the mouth feel and malty flavor of amber to dark beers in a pleasant way. Even a small amount in the grain bill gives the beer a typical malty note. BEST Munich is therefore ideally suited to enhancing the body of very highly fermented beers. Due to the generally higher levels of protein in this malt, the higher its concentration in the grain bill, the better the foam of the beers brewed with it.

    Base malt for all dark beers, Export, Märzen, Alt, wheat beers, Bocks and Brown Ale.

    Bestmalz Pilsen malt is used either alone or together with other malts, it is the perfect base malt for all kinds of exceptional and flavor-some beers.
    Base malt for all beers, Premium Pilsner and Pilsner beers, Export, Kölsch, Lager, Helles, light beers, and as a base malt for almost all beer styles.

    BEST Vienna produces a golden color, excellent foam and a pleasant mouth feel in the finished beer. Unlike BEST Heidelberg, this malt uses two-row brewing barley varieties that create more color during the malting process. The protein content is somewhat higher than in a Pilsen malt of the same crop year with a similar enzyme composition and high extract values. For Export, Märzen, Porter and all other beer styles.

    Gladfield Ale malt has very similar attributes to the Pilsner malt but only winter grown English bred 2-row varieties are used. The malt is fully modified through a traditional long cool germination. This is a highly friable malt but the soluble nitrogen ratios are kept relatively low to enhance mouth feel and head retention.
    The kilning regime gives a nice toasty character with enhanced maltiness for dark ales.

    Gladfield's American Ale malt is the answer for brewers who have found that Gladfield regular Ale malt will add too much of a malty and toasted flavour profile to certain beer styles. This malt starts as all our other base malts do with a traditional long cool germination period. What separates it from the standard Ale malt is a newly developed a kilning recipe that favours colour formation typical to an Ale malt but with a clean malt profile and without the extra toasted flavours. This malt has been a favourite for producing popular hop-forward American style beers for which it was named.

    Lager light is made especially for brewing an all malt lager where a light colour is desirable. It can also be used alongside Gladfield wheat malt when brewing delicate bright clean wheat beers where low colour formation is important and a clean malt profile required.
