Gladfield Ale malt has very similar attributes to the Pilsner malt but only winter grown English bred 2-row varieties are used. The malt is fully modified through a traditional long cool germination. This is a highly friable malt but the soluble nitrogen ratios are kept relatively low to enhance mouth feel and head retention.
The kilning regime gives a nice toasty character with enhanced maltiness for dark ales. This can be toned down for a cleaner malt profile for a lighter hoppy pale ale by adding small amounts of Pilsner malt. A single step mash of between 64° and 67°C is sufficient to avoid any lautering problems and obtain good extract however multi step mashes may improve extract potential and improve stability in the bottle. Mash pH should be adjusted correctly to achieve brew house efficiency.
EBC 5 to 6

Questions & answers

Can I use Gladfield Ale malt as the only malt in a beer, and how is it different from Gladfield American Ale malt?

Yes. Gladfield describes Ale malt as a base malt with a distinctly English character that can be used at up to 100% of the grist, and it lists it as a substitute for Maris Otter. It is kilned to a toasty character and has a wort colour of 5 to 6 EBC with a diastatic power of at least 150 WK, so it converts itself in the mash. Gladfield American Ale malt is made for a cleaner, less toasted flavour and suits hop-forward beers; it is slightly paler (4.5 to 5.5 EBC). Choose Ale malt for English-style ales and American Ale malt when you want the hops to lead.
