US05 is an American ale yeast which produces well balanced beers with a very clean, crisp end palate. Forms a firm foam head and presents a very good ability to stay in suspension during fermentation. To avoid diacetyl production, we encourage brewers to use a sufficient pitch rate and to apply a diacetyl temperature rest during fermentation.

Should I rehydrate Safale US-05 before pitching it into my wort?
You can do either. Fermentis says to sprinkle the dry yeast directly onto the wort surface at or above fermentation temperature, or rehydrate it first in at least ten times its weight of sterile water at 25 to 29 degrees Celsius for 15 to 30 minutes, stir gently, then pitch the cream into the fermenter.
