Why would I need a primary fermenter as well as this carboy for a wine kit?
They handle different stages: the primary fermenter holds the wine during initial fermentation, then the wine is siphoned off its sediment into the carboy for stabilising and clearing. For a 23 L kit that uses this two-vessel method, this carboy is the second vessel and needs a bung and airlock.
